Is there any way to pause a dancer's routine, and pick it up at the same point later on?

Yes
Right click on the girl playing and click on the big icon that looks like two vertical bars. Clicking this again (it will show as a play icon) resumes play.
If you do not see this on the wheel, then you need to add that in the settings. Go to settings. You may need to enable advanced settings. Scroll way down to 'Controls' and find 'contexual menu'. Some items can be added to or removed from the wheel (contexual menu).
