Production at iStripper is orientated to filming real girls and it would be difficult to switch to a cartoon-making system. It may be possible to convert the video stream into a cartoon in software, though it wouldn't have the advantages of manually drawn cartoons, in terms of control of shape, movement and light. It would also need a manual post-production pass, if it was going to be any good. So, generally, not worth it.

As @Manue says, dressing live girls as cartoon characters should be possible.
